Regulatory and third-party food audit standards require food producers (such as fresh produce growers, shippers and packers) to trace their raw materials, products and packaging forward and backward.

Food producers must be able to maintain traceability one step forward into distribution, and one step back toward the source of the raw material.

During a traceability audit, food producers must demonstrate they have robust systems for keeping records that will link raw materials and packaging to the products in which they are used and to the recipients of those products.

These records must be rapidly collatable to a coherent and presentable format.  This is exactly what the Freshware Traceability Module does. 

During a food standards audit a food producer may be asked to perform a timed vertical trace. The auditor will select a product with a unique lot number produced on a particular day. The producer will be asked to, within a time limit, produce all of the records related to the production of that lot of product, disposition of the product and the source of the ingredients and packaging used to produce it, including:

  • Production batch sheets
  • Receiving records for the ingredients and packaging used in the lot
  • Records of any rework or overrun added to the product or created by it
  • Inventory and distribution records of the lot.

This allows the auditor to verify that the manufacturer documents the source, usage and distribution of materials and packaging. Those records must link the unique identifiers of the raw materials to the identifier assigned to the finished product.
